Sicamous food truck Snacktastic is on the move, having rolled into Enderby on Tuesday, April 16.
Just three years after starting the food truck, owner Dawn Backs is kicking it into high gear with a second location.
鈥淚鈥檓 going to have to clone myself,鈥� she joked. 鈥淓xcept I don鈥檛 think the world is ready for that.鈥�
Until the world is ready, Backs is enlisting the help of family to keep the two locations deliciously on track with the same menu of 鈥渉ome style eats鈥� at both. That includes the three Bs 鈥� breakfast, burgers and beverages 鈥� as well as chicken, wraps, sandwiches and more.
Backs鈥� burgeoning food truck empire is the culmination of years in the in the food industry, starting with her first restaurant job in her early teens. Most recently, in 2016, she ran the Sicamous Recreation Centre鈥檚 concession until that was derailed by COVID. Having to put the brakes on that, however, led her to pursue her dream job of owning a food truck 鈥� now trucks, plural.
鈥淲e are excited to bring Snacktastic to Enderby,鈥� Backs said. 鈥淎nd are grateful for the support of all our customers.鈥�
The signature red truck is located at the south end of Enderby by the Grass Hut on Highway 97A, where Backs is looking forward to welcoming new patrons and offering locals another dining option. Like the Sicamous location, the Enderby Snacktastic will be open during the day from Tuesday to Sunday, though firm hours 鈥渉ave yet to be determined depending on what the demand is,鈥� letting Enderbians set the pace.
